The kitchens of Villa Hibiscus are the playground of Chef Bastian, who was trained in French Michelin-starred restaurants by the likes of the illustrious chefs Joël Robuchon and Anne-Sophie Pic. The ingredients are seasonal, extremely fresh, and used in sophisticated dishes that are enhanced by their artistic presentation, offering guests of Villa Hibiscus an outstanding fine-dining experience in an idyllic setting.


To enchant your tastebuds, you can choose from three set menus: Discovery, Gourmet, or Prestige. Upon booking, you’ll be asked if you have any food allergies or dislikes, to ensure every single mouthful is nothing but enchantment.

Coco Beach

Coco Beach is a real treasure by the sea. Open from Tuesday to Sunday, this beach bar and restaurant is the place to go for a sophisticated and relaxing Caribbean treat. It opens at 9:30 am, which means you can enjoy your first cup of coffee facing the sea and soak in the first rays of the sun. Coco Beach is the place to be, no matter the time of day, whether you want to enjoy a gourmet lunch or just chill by the water.


After a dip in the warm turquoise waters, the comfortable beach chairs are perfect for sipping a cocktail prepared expertly at the bar. Chef Hubert Tarbouriech will then treat you to a selection of his iconic dishes, cooked with all his French savoir-faire, but with a Caribbean twist. Every Friday evening, you can also dine under the starry sky at Coco Beach, in an elegantly lit setting. The Chef showcases his art in a menu concocted for the occasion, with plenty of choices, so everyone can find something they like.

L'Atelier

At l’Atelier there is no menu, we change it up according to the meats available from our suppliers and the morning catch. This guarantees our food is as fresh and high quality as possible. Everything is made in-house and is a delight for connoisseurs and discerning palates. There are a few signature dishes that make regular appearances on the menu, such as the crispy soft-boiled egg and the Churrasco Entraña Steak, but the house's hallmark is opening its guests eyes to new things.


Meat lovers will not be disappointed; this is the place to find the best quality meats. Genuine Japanese Kagoshima Wagyu, Spanish Rubia Gallega filet, Premium USA Prime Tomahawk, Portuguese Minhota Gallega prime rib, Argentinian Ribeye Steak Center Cut, French entrecote Bœuf Blanc Rouge from Lesage… Our succulent meats will delight your tastebuds. As for seafood, L’Atelier offers yellowfin tuna, snapper, mahi-mahi, or lobster, depending on the catch of the day.

The “Village des Lolos” stretches along the Boulevard de France, where mingling aromas will make your mouth water! Sandy’s is one of these traditional friendly restaurants, which is loved for its melt in the mouth Creole specialties. At breakfast you will discover a sweet and savory menu for a truly complete meal.


For lunch and dinner, all the flavors of the Caribbean are on the menu, including all St. Martin’s must-try dishes, such as acras de morue (codfish balls), stuffed crab, conch meat fricassee, oxtail stew, grilled lobster and chicken Colombo. You can also enjoy some delicious soups at Sandy’s.


For a quick snack, the restaurant can offer sandwiches, wraps and Caribbean salads. And if you have a sweet tooth, you won’t be able to resist the sweet crêpes or the coconut tart.



On Fridays, Sandy’s has a party atmosphere with a Happy Hour between 6pm and 8pm; on Saturdays there’s a karaoke from 7pm, and on Sundays there’s live music by a musical group. The restaurant is open on Mondays from 9am to 4pm and from Tuesday to Sunday from 9am to 10pm.

The restaurant is blessed with a panoramic view that can be enjoyed any day or night of the week. For lunch, opt for the air-conditioned interior or the shady outdoor areas. At the end of the day, the setting sun offers a sparkling picture to be admired as you sip a cocktail, while the evening brings a cozy, romantically subdued atmosphere where couples can savor their bond.


La Terrasse will get your tastebuds buzzing with bistro-style cuisine that places the spotlight on traditional French dishes: Snails in garlic butter, eggs en cocotte, lamb shank confit, roast corn-fed chicken supreme, etc. The chef also takes a few liberties with Asian and Caribbean food culture, proposing his own chicken spring rolls, Buddha bowls, mahi-mahi filet in Creole sauce, or mi-cuit tuna with teriyaki sauce. For dessert, you won’t be able to resist the nutella tiramisu. The restaurant proposes free delivery on certain dishes from Monday to Friday.

Near the sea, overlooking the sparkling blue of Marigot bay, this little restaurant will tickle your taste buds with its dishes, snacks, vegetarian specialties and incredible cocktails. Here you’ll always be welcomed by a wide smile and you can take as much time as you want to eat and drink the exquisite Caribbean flavors.


Hot Spot is open non-stop between noon and 9pm, from Tuesday to Sunday. With flavors from the land and from the sea, dishes without meat or fish for vegetarians, desserts and fresh fruit juice, this friendly venue welcomes you to the Marigot seafront, among other local restaurants and odors of barbecues and spices. At Le Hot Spot, you’ll particularly appreciate the cocktails made by the cocktail specialist Daryl, on-trend creations full of heavenly tropical flavors to savor!



The menu offers you a choice of gourmet local Caribbean cuisine. In the Le Hot Spot kitchens, the team prepares chicken, tuna, shrimps, oxtail, mahi-mahi and lobster. Grilled, in a fricassee, baked in the oven or with a salad, this produce also goes well with traditional accompaniments such as rice and peas, plantain, yams or pasta. Each day, Le Hot Spot has a few surprises in store with its specials, and on Friday evening, there is a Happy Hour between 5pm and 7pm, so you can sip cocktails overlooking the sea. At Takata Caribbean Ice Cream, choose from vanilla or coconut flavor, add some fresh fruit, Nutella or caramel, then watch Myrtille wield her spatulas and sprinkle the creation with a tasty topping.


You’ll admire the voluptuous shape of these ice creams rolled up like pancakes, before plunging your spoon into them with pleasure. Myrtille also offers ice creams in pots or cones, with flavors that change according to the mood of the day: chocolate, coconut, caramel, mango, pistachio, vanilla, banana, hazelnut, and many other flavors to discover.
